2003年8月31日 · Went there to give the barbecue a try a few weeks ago, and noticed the sign for deep-fried turkeys. The barbecue wasn't bad - we tried ribs and brisket. Not as good as Jones (IMO), but better than most in the Seattle area. I was thinking of giving the deep-fried turkey a try, but have the same question about the timing.

2018年11月5日 · I have seen a lot of overcooked fried turkey and feel that either the parted-out method or sous vide is a better way to go. I also think the low and slow method used in barbeque places has merit, especially for the breast. 3-4 hours at 190°F and the breast meat is really moist and almost unrecognizable.

2012年12月14日 · What I've found w/ turkey after some experimentation --Brine for 6 hours using the Momofuku fried chicken brine. Rinse. 63C for 4 hours (we're talking about a decent sized breast here). Chill in the bag. 12 hours or so before you want to serve it, take it out of the bag and let it air dry in the fridge. Deep fry at 190C.
